Pre-heat the oven. Wash the chicken breast and season with sea salt. Grill the meat on an indoor grill. Remove the meat and cut into chunks. Grab the wheat pizza crust and brush with olive oil. Spread the pizza sauce all over the crust. I used some homemade sauce that I had stored in the freezer. Store bought jar sauce will do the trick. The spring mix comes from a package bag of salad. I spread the greens over the sauce then I top them with the chicken chunks. Sprinkle the parmesan cheese over the pizza toppings. Top with a blend of pizza cheeses that comes in a package. I am the stir-fry queen. I will throw anything in a wok and cook it. I mainly like chicken and beef stir-fry. I often go to the farmers market and buy fresh vegetables. There was an Asian family there selling their vegetables. Most of the stuff they had I had never seen but I am open to trying new things. They convinced me to buy a vegetable that looked like a cucumber and some other weird shaped vegetable.They referred to the strange item as a luffa.</div>

Luffa is a fruit eaten as a vegetable and belongs to the cucumber family. The weird thing about this fruit is its use as a bath or kitchen sponge also spelled loofah. The fruit dries out for use as a natural scrubber. Who knew? It is a popular vegetable in Chinese stir-fry dishes and known as Chinese okra. Since I am such an adventurer, I bought one to see what I could do with it. I came up with a Chinese okra chicken recipe.</div>

Wash chicken and marinade in sesame ginger sauce for an hour. Place a wok on the stove and add 2 tbsp oil. Let the wok get nice and hot before adding ingredients. Cut the chicken breast into pieces. I season the chicken with sea salt and stir in the hot oil for a few minutes. Remove chicken from wok. Clean the wok and add 2 tbsp oil. I microwave the broccoli for 1-2 minutes first before adding to the wok. Wash the Chinese okra and cut the ends. Slice into ½ inch pieces. Stir-fry broccoli and luffa in the hot oil. Add the garlic chili paste in the middle of the vegetables and stir around. Remove vegetables once tender. Add 2 tbsp oil to wok then add cold rice and stir-fry for a minute or two. Cut up the onion. I like to add the onion at the end so it won't become soggy. Add to the rice the chicken, vegetables, and cut up onion. I don't use much salt since soy sauce has a lot of sodium. Pour the soy sauce into the wok and stir-fry all the ingredients together. Enjoy!</div>

First pre heat the oven to 170° or use gas mark 3. Place the cocoa powder in a small bowl and steadily blend in the boiling water. The older ghosts are probably experienced enough to add the eggs. One egg at a time, beating well after each egg addition. When done, they have to add the orange zest and juice, then stir in the melted chocolate, soured cream and the cocoa mix.</div>

Level the top of the cake if necessary and then slice into 3 equal layers. Place the bottom cake layer on a serving plate and pipe or spread ½ of the butter cream over it. Top with the middle cake layer and spread with the remaining cake layer.</div>

Halloween is creeping upon us, and soon we will be looking toward Thanksgiving as a time of family, food, and football. Tradition is important this time of year, especially here in the south. Thanksgiving has always had a special place in my heart as a time for the family to congregate and share a wonderful feast of dressing, gravy, and, in my family, chicken. My personal holiday tradition is at least two crescent roll sandwiches made from the dishes above, it's simply not Thanksgiving without it. Well, that and some pumpkin pie and whipped cream.</div>

My family broke with tradition and eschewed the turkey and went with two baking hens prepared in a pressure cooker, lightly seasoned with salt and pepper. I eat just one little old scone and an hour later I feel ravenous, a little foggy, a little blue, a little out of sorts, a little irritable. I want to eat everything in sight. I want to take a nap. Let's just say that the combo of white flour and sugar in that one little scone wreaks havoc on my system and my mood.</div>

I've been playing with recipes to whittle down the "whites" and boost up healthier ingredients without compromising taste and texture. Traditional English scones tend to bit on the dry side -- the perfect canvas for clotted cream and homemade jam. In this recipe I've tried to maintain the integrity of the scone while giving it an upgrade. The white flour is greatly reduced. The base is nutty, whole-grain oatmeal, which gives it a "fall apart" texture, rounded out with a bit of whole wheat and unbleached flours.</div>

In order to reduce the dairy I substituted 2% Greek yogurt thinned with a bit of unsweetened almond milk for the buttermilk. I prepare my potatoes in a sauce pan. Peel the potatoes and cut into pieces. Wash the potatoes and rinse. Cover the potatoes with water and salt the water. Boil them until they are tender. Once the potatoes are fork tender, drain the water and add in the butter and mix with potatoes. Reduce the heat. Sprinkle the brown sugar over the potatoes. If you like your potatoes super sweet then add more sugar. Season them with cinnamon. I don't use nutmeg since I don't like the taste of nutmeg but it is a popular spice for sweet potatoes. Pour in the syrup and mix around. I use Mrs. Butterworth syrup or sometimes maple syrup. It should come out like a buttery sweet glaze. Toss the potatoes in the sauce and serve. If you prefer marshmallows, use a casserole dish. Add in the potatoes and the marshmallows. Pre-heat oven and bake for 35-40 minutes until the top of the casserole is golden brown</div>

Sprinkle 1 tbsp black pepper over the meat. Generously season the chicken with the sea salt. If you want a better flavor, set the meat in the refrigerator for about an hour. In a food processor pulse 2 cups of corn cereal. Put the cereal in a bag. Add the seasoned chicken breasts and shake around coating the meat. Place the coated chicken in a casserole dish. For each piece of chicken add 1 tbsp lemon juice over the meat. Melt the ½ stick butter in the microwave. Pour the melted butter over the seasoned breaded chicken. Bake in the oven for 45 minutes. I serve this juicy breaded chicken with some vegetables and tomato stew.</div>

Grab a large mixing bowl. Melt the butter in the microwave. Mix in the brown sugar with the eggs. Then add the milk, butter and vanilla; mix well. In a separate bowl add the bread flour, baking soda, and baking powder. Salt the dry ingredients with the sea salt. If the bananas have turned black, then they are really soft. Peel the bananas and put in a bowl. With a potato masher, mash the bananas then add to the sugar and egg mixture. Mix in the dry ingredients with the banana mixture. Pre-heat the oven. Grab a loaf pan and butter the entire inside of the pan. Sprinkle about a tsp of flour to coat the butter. Pour the banana batter into the coated loaf pan. Bake in the oven for 30-40 minutes or until a toothpick inserted comes out clean. Remove the loaf pan from the oven. I like to butter the top as soon as I take it from the oven. I also like to slice a piece and spread a tsp of butter on the slice. Another way I like to eat it is bake the bread with nuts, then slice a piece hot and put 2 to 3 tbsp of cold cinnamon applesauce on top of the bread.</div>

In a hot skillet with 1 to 2 tbsp oil, sauté the chicken tenders until cooked through. Grab a plate and place 2 servings of Doritos (about 14 chips) on the plate. I put about half a cup of the refried beans in the microwave to heat up. Layer the 1/3 cup beans on the chips. Top the beans with the spicy chicken pieces. Heat the cheese sauce in the microwave. I like the single cheese cups or Cheez Whiz would be a great alternative. Pour the melted sauce all over the ingredients. Top the cheese sauce with 2 tbsp salsa. Spoon a serving of sour cream on top of the cheese sauce. Take a green onion and slice into small pieces. Sprinkle the onion over top of the sour cream. You can substitute fat-free sour cream if you want to lessen the calories. Since this is a serving for one, you can use 1 lb of ground chicken for a group event or party. Brown the ground chicken and add the seasoning packet. I would add the salsa to the seasoned ground chicken. Then you can assemble it the same way starting with the chips. Add the meat mixture then cheese sauce, sour cream and lastly the onion. I would omit the cayenne pepper, salt and black pepper if using a taco seasoning pack.</div>

I would like to share with you my mother's simplified version of this cake. But be aware, there is a challenge!</div>

The usual humble version of this cake comes without icing, but not the special Halloween version! We decorate this one with a style to impress our guests and form an edible sweet cake pumpkin. The preparation is a bit unusual too. Instead of one cake, we will bake two. From the spare mixture you can easily bake twelve cupcakes. With these two cakes we are going to build the main base of our cake pumpkin when connected together. Then we will brush a thin layer of apricot jam known as an apricot glaze between them to work as a glue to attach the two parts together. But let's list the ingredients before having a more detailed look at the directions.</div>

First separate egg whites and egg yolks. Whisk the egg whites in a large mixing bowl until soft but not dry. Using the same whisk save on washing, beat the butter in a large bowl until soft. Add icing sugar and 4 yolks. Sift the flour over the mixture and fold in. Add milk and stir the egg whites into the mixture. Mix gently. Divide the mixture into separate bowls 400 g each.</div>
